THE muffin.

THE muffin.

I started working for a college two years ago. In my new apartment, I discovered that food, like a key, works to get in with a student. So I started cooking. A lot.

Also, for the many meetings and classes I was attending, baking was a practical gift and comfort I could offer. One of the first things I made, which has since become a staple food in my world, is the banana muffin. It sounds basic and simple, but these are always a crowd pleaser.

Some people are pretty protective with recipes. I am not one of those people... I'm all about making something if you love it. So here you go. Dig in.

So THE muffin...

3 really ripe, even really brown bananas, mashed
1 1/2 cups sugar
1/2 cup oil
3 Tablespoons milk
2 eggs
1 Tablespoon Vanilla
1 Tablespoon Cinnamon
1 1/2 plus 2 Tablespoons Flour
1 tsp baking soda
1 tsp salt
1 cup finely chopped apples

Bananas!
Preheat the oven to 375 degrees
Mix the all ingredients up to the flour.
Stir in flour, baking soda, and salt.
Finally stir in apples.
Distribute evenly among 24 greased muffin pans.

THE crumble topping.
1/2 cup butter
3/4 cup flour
3/4 cup sugar
3/4 cup oats
1 Tablespoon cinnamon

Mix all the ingredients together with your hands until crumbly. Evenly distribute over the 24 muffins.
Bake for 25-30 minutes, or until golden and firm.

Adding the apples keeps the muffin moist.
THE crumble topping.

Ready to be baked.

Golden, and delicious.


It is the best banana bread I have yet to eat... and I guarantee if you gift it or bring it anywhere, people will be pounding on your door for the recipe.
