Bancocochocalualmond Pie.

Yes that is a mouthful. And literally this pie IS a mouthful. It is a banana, coconut, chocolate, kahlua, almond pie, with a homemade graham cracker crust of course.

After my roadtrip to Georgia, I had a lot of graham crackers left from our snack bag. With the abundance of grahams, I began to stalk the internet for a good pie to make with a graham cracker crust. I stumbled upon a recipe for a chocolate kahlua pie, and adopted it a bit to make it a tad more creative. Check it out. And then make it. Because it is SO GOOD.

Homemade Graham Cracker Crust
2cups crushed graham crackers
1/2 teaspoon salt
3 Tablespoons Sugar
1/2 cup melted butter

Mix all ingredients, and press into a pie pan. Bake at 375degrees for about 12 minutes, or until golden.

Filling:
3 Almond Joy candy bars
1 banana
4 oz chocolate
2 1/4 cups milk
3 Tablespoons butter
3/4 cup sugar, divided
3 Tablespoons plus 1 teaspoon cornstarch
3 egg yolks
2 teaspoons vanilla
5 Tablespoons Kahlua

Chop up almond joy bars into chunks, and slice bananas. Place in the bottom of the graham cracker crust.

Next, place the 4 oz of chopped chocolate into a large bowl.
In a separate bowl, whisk the egg yolks until light yellow. Whisk in the cornstarch, 1/2 cup sugar, and vanilla. The mixture will be thick, but whisk well.
In a saucepan, bring the milk, butter, and 1/4 cup sugar to a boil. Remove from heat and pour 1/3 of the mixture into the egg yolk mixture, whisking consistently to keep eggs from cooking. Add another 1/3 of the milk mixture and continue to whisk. Pour all parts back into the saucepan, whisking constantly until mixture thickens to the consistency of a pudding.

Yummy.

Pour mixture into the bowl with chocolate and stir until chocolate is completely melted. Let the mixture rest for about 10 minutes, and then spread over the bananas and almond joy bars. Chill the pie for a minimum of four hours in the refrigerator, and then indulge.
